Cathedral Island in Poznań is really special it's actually considered Poland's birthplace and has these fascinating legends but tourists often miss it. Another hidden gem is Elbląg Old Town it used to be this important Hanseatic port and still has beautiful medieval architecture but gets way fewer visitors than Gdańsk.
